What Are Jammie Dodgers?
Jammie Dodgers are a popular British cookie, made from shortbread with a raspberry or strawberry flavored jam(jelly) filling. Introduced in 1966, they are currently produced by Burton’s Biscuit Company at its factory in Llantarnam. In 2009, Jammie Dodgers were the most popular children’s sweet cookie brand in the United Kingdom, with 40% of the year’s sales consumed by adults.
Jammie Dodgers are a type of Linzer cookie, which is a cookie-size version of a Linzer torte, and they are often associated with the Christmas season in other parts of the world.
Buttery cookies filled with jam – simple – yet so delicious!
How To Make Jammie Dodgers:
You will need:
1. Butter
2. Sugar
3. Flour
4. Thick Jelly/Jam
The butter and sugar are beaten together until creamy. Then fold in the flour. It should form a soft dough.
Roll the dough out onto a floured sheet of baking parchment to a depth of around 5mm. Cut the desired shapes using a cookie cutter. Remove the excess dough around the shapes. (You can re-roll the excess to make more cookies)
Transfer the sheet with the cookies to a baking tray – and bake in the oven for 12 minutes.
Once the cookies are cooled, fill them with jam and sandwich them together.
Dust with powdered sugar and enjoy!

- 55 g/2oz caster sugar plus extra to finish
- 1 jar ot thick jam/jelly
