Ingredients

  • 1 large pitted peach
  • 1 cup frozen mango chunks
  • 1/3 cup frozen pineapple
  • 1 teaspoon minced ginger root
  • 1 tablespoon chia seeds
  • 1 cup vanilla almond milk
  • 12 leaves of fresh mint (optional)

Instructions

  1. To a high-speed blender, add the frozen fruit first, followed by the rest of the ingredients.
  2. Make sure the chia seeds are added last.
  3. Blend for 4-5 minutes, or until completely smooth.
  4. Pour the smoothie into a cup and enjoy!

You can swap ingredients or add extra ingredients should you want to elevate this smoothie. 

Below are some of my suggestions, but feel free to experiment on your own too!

  • Boost With Protein Powder: Add more protein to this smoothie easily, and still keep it vegan friendly, by adding a scoop of your favorite vegan protein powder.
  • Throw Some Greens: Add some greens to your blender for extra nutrients. Spinach and kale work wonderfully.
  • Almond Milk Substitute: Swap the almond milk for oat, or other dairy-free milk of choice.
  • The Ginger: If you don’t have ginger root, use powdered ginger instead. 1/4 teaspoon per serving is plenty.
  • Berry Version: Swap the pineapple for frozen berries of choice. I personally loved using strawberries!

#2. Can I use fresh fruit instead of frozen?

Absolutely! You can use fresh mango and peach slices if you prefer. Using fresh fruit will give the smoothie a slightly different texture though, typically a bit less thick than when made with frozen fruit. To achieve a similar thickness and chill as with frozen fruit, you can add ice cubes to the blender.

#3. What is the best way to store this leftover smoothie?

To store this smoothie, pour it into an airtight container or a mason jar and seal it tightly. Refrigerate the smoothie immediately. It’s best consumed within 24 hours.

For longer storage, you can freeze the smoothie in an airtight container or as ice cubes, which are perfect for quick blending later.

Frozen smoothie cubes can be kept in the freezer for up to 2 months.
