Super Easy Kipplens (Aka Mexican Wedding Cakes)

Well, hello! We have an incredible Christmas treat for you today. We are making Kipplens! That’s right, crunchy on the outside, and super soft in the middle with a background taste of nuttiness.
These cookies have many different names. Some people know them as snowball cookies, others as Mexican wedding cakes. We personally like Kipplens more!

What Is a Kipplen?

Some of you may not know what Kipplens are, and where they originate from.
Kippens also known as snowball cookies are German cakes/cookies that resemble and taste almost just like Mexican wedding cakes.
It’s a very popular Christmas dessert, enjoyed all over the world.

Making kipplens is extremely easy. They hold their ball shape very well because the recipe doesn’t ask for any raising agents.
They are crispy on the outside and soft and cakey in the middle. So delicious!

How To Make Kipplens

Kipplens contain the following ingredients:

1. Butter
2. Sugar
3. Flour
4. Powdered Sugar
5. Pecans
6. Vanilla Extract
7. Salt

Preheat the oven to 325F/160C and line 2 baking sheets with nonstick parchment paper.

Put the soft butter and sugar in a bowl with the vanilla and cream until smooth for about 3 minutes using an electric mixer. Fold in the flour and salt and mix.

Finally, fold in the nuts. Roll the dough into 1-inch balls and place them on the baking sheets. Bake in the oven for about 18-20 minutes, or until slightly golden.

Let them cool for 10 minutes then roll them in the powdered sugar.

Ingredients
  

  • 1 cup/227g of butter soft at room temp
  • 1/2 cup/100g of sugar
  • 1 tsp of vanilla extract
  • 2.5 cups/300g of all purpose flour
  • 1 cup/150g of chopped pecans or nuts of choice
  • Pinch of salt
  • Powdered sugar to roll the cookies

Instructions
