Vegan, gluten-free coconut cookies made with minimal effort, these cookies are a great treat. If you are looking at eating healthier, and want to increase more plant-based meals in your diet, this recipe is for you. Dairy-free, refined sugar-free, gluten-free, egg-free, basically all that stuff is out, only goodness is in.

These cookies aren’t exactly vegan chocolate chip coconut cookies – as we melted the chocolate chips and spread them on top of the cookies, however, you can fold them in the cookie dough if you like. We wanted to spread some chocolate on these cookies.
If you have worked with coconut flour before, you will know how dry it can be, so the melted chocolate on top gave it more moisture.

Vegan lemon coconut cookies aren’t necessarily coconut flour cookies vegan keto, but they are quite low on carbs since the only sweetness and carbs come from the banana.

How To Make Vegan Gluten Free Cookies Coconut Flour:

You will need:

1. Ripe Bananas
2. Coconut Flour
3. Lemon Zest
4. Melted Chocolate (we used 100% dark)

The banana is mashed, then the zest and coconut flour are added. This should form a soft dough. Shape the dough into small cookies and bake.
Once baked, cool them for 5 minutes, then dip them in melted chocolate. Sprinkle some coconut and lemon zest if you like. Enjoy!

Ingredients
  

  • 1 cup/225g of mashed ripe bananas
  • 1 /1/4 cups/155g of coconut flour
  • 1/2 cup/75g of chocolate melted
  • 1 lemon zested

Instructions
 

  • Preheat the oven to 170°C/ 340°F /Gas Mark 3, and line a large baking tray with parchment paper.
  • The banana is mashed, then the zest and coconut flour are added. This should form a soft dough. Shape the dough into small cookies.
  • Add the cookies to the prepared baking tray, and bake in the oven for about 20 minutes.
  • Once baked, cool them for 5 minutes, then dip them in melted chocolate.
  • Sprinkle some coconut and lemon zest if you like. Enjoy!

Notes

Cookies will last in an air-tight container for up to 3 days in the fridge or at room temp.
