g/6oz plain flour

g/4oz unsalted butter
softened

g/2oz caster sugar
plus extra to finish

jar ot thick jam/jelly
Instructions
The butter and sugar are beaten together until creamy. Then fold in the flour. It should form a soft dough.
Roll the dough out onto a floured sheet of baking parchment to a depth of around 5mm.
Cut the desired shapes using a cookie cutter. Remove the excess dough around the shapes. (You can re-roll the excess to make more cookies)
Transfer the sheet with the cookies to a baking tray - and bake in the oven for 12 minutes.
Once the cookies are cooled, fill them with jam and sandwich them together.
Dust with powdered sugar and enjoy!
Notes
Cookies will last in an air-tight container for up to 3 days at room temp.
