A high-protein coconut smoothie bowl that boosts energy and curbs cravings. The recipes only needs 4 simple ingredients.

Ingredients

  • 1 cup/150g frozen pineapple slices (See ntoes*)
  • 1 tsp vanilla extract
  • 1 small scoop of vanilla protein powder
  • 1/3 cup coconut milk from a can

Instructions

  1. If you don't have pre-frozen pineapple slices, see the notes.
  2. Add all of your ingredients to a powerful blender or a food process, starting with the frozen pineapple slices.
  3. Process until completely smooth, stopping and scraping the sides a few times for a consistent blend.
  4. Serve the creamy mixture onto your favorite smoothie bowls and add your desired toppings.

Best consumed straight away.

*Calories do not include any toppings!

**If you don’t have pre-frozen pineapple chunks, you will need to freeze some yourself. Slice the peel off a large pineapple, then dice the flesh into chunks. Spread the pineapple in a large baking tray and place the tray in the freezer for a minimum of 2 hours. Transfer the pineapple chunks to a freezer bag, and freeze for another hour before using.
