- 1 medium-sized carrot (peeled, and finely diced or shredded)
- 1/2 large apple (cored and diced)
- 1 handful of spinach (washed)
- 1 tbsp chia seeds
- 1/2 lemon (juiced)
- 1/4 avocado (pitted and skin removed)
- 1 cup coconut water
Instructions
- Soak the chia seeds in the coconut water first for 5 minutes.
- Using a high-speed blender or a Nutribullet, add the avocado and spinach first, followed by the rest of the ingredients.
- Blend for 3-4 minutes or until smooth and creamy.
- Serve and enjoy!
