Whip up a vegan dragon fruit green smoothie, a nutrient-packed drink blending exotic dragon fruit with leafy greens for a delicious, health-boosting vegan treat.

Ingredients

  • 1/2 cup diced white dragon fruit
  • 1 handful of spinach or kale
  • 1 cup coconut water
  • 1/3 avocado
  • 1/2 teaspoon matcha (see notes for alternatives)
  • 1 tablespoon chia seeds
  • 1/2 cup frozen banana slices (see notes for alternatives)

Instructions

  • To a high-speed blender or a personal blender, add the spinach and dragon fruit first, followed by the rest of the ingredients.
  • Blend for 2-3 minutes, until smooth and creamy.
  • Serve and enjoy!

If you have never prepared a dragon fruit before, here is a step-by-step guide on how to prepare it:

  1. Rinse: Wash the dragon fruit under cold water to clean the skin.
  2. Slice: Cut the dragon fruit in half lengthwise with a knife.
  3. Scoop: Use a spoon to scoop out the flesh from each half. Discard the skin.
  4. Dice: Cut the scooped flesh into smaller pieces for easier blending.

Optional Recipe Customizations:

After you have made this smoothie several times, you might want to change it up a bit.

Well, that’s what I did. 

Here are some tasty variations of this smoothie you could try should you want to:

  1. Sweeter: If you like your smoothies sweeter, add 1 teaspoon of maple syrup.
  2. No Banana: You can swap the banana for pineapple, mango, or even berries. Just make sure they are frozen.
  3. Protein Boost: Add a scoop of unsweetened and unflavored protein powder for 20g extra protein! (I used brown rice protein powder).
  4. No Matcha: If you don’t have matcha available, use a tablespoon of oats instead, or other powder you have at home. (E.g – wheatgrass powder, leafy green powder, goji-berry powder)
  5. Nutty Goodness: Add a tablespoon of nut butter, or swap the chia seeds for nut butter for a nutty taste and creamier smoothie.
  6. Coconut Swap: Swap the coconut water for dairy-free milk, such as almond, oat, or soy milk.

The smoothie was very easy to blend, even with lower-speed blenders such as BlendJet 4000mAh.
