Refresh with my Mint Ginger Cucumber Smoothie, a crisp and invigorating blend perfect for cooling down and revitalizing your body.

Ingredients

Units Scale
  • 1 cup frozen pineapple
  • 1/2 cup fresh mint leaves
  • 1 cup of spinach
  • 1/2 tsp minced ginger root
  • 1/2 cup sliced cucumber
  • 1/2 cup coconut water
  • 1/2 lemon juiced

Instructions

  1. To a high-speed blender, add the sliced cucumber first, followed by the rest of the ingredients.
  2. If using a Nutribullet, add the frozen pineapple first.
  3. Blend for 3-4 minutes or until smooth.
  4. Pour the smoothie into a glass filled with ice and enjoy!

  • Peppermint Extract: If you don’t have fresh mint, you can add 1-2 drops of peppermint extract.
  • Citrus Twist: For a sweeter smoothie with a citrus flavor, use orange or grapefruit juice instead of coconut water.
  • Swap The Pineapple: You can use bananas or mango instead of pineapple!
  • Add Some Healthy Fats: 1/4 avocado, a tablespoon of chia seeds, or a tablespoon of nut butter can help add healthy fats and make the smoothie more filling.
  • Boost With Protein: If you are not avoiding dairy, add 1/2 cup of yogurt.

This ginger and cucumber smoothie has done wonders for my skin.

I have been drinking it for breakfast 3 days in a row every other week for 8 weeks now.
