Equipment
- 1 Blender we use this one
Ingredients
- 0.66 cup/100g of canned jackfruit in water drained
- 1/4 avocado pitted and peeled
- 1/3 cup/45g frozen banana slices
- 2 pitted dates
- 1 lime juiced
- 1 handful of spinach
- 1 cup/230ml of dairy-free milk I used almond
Instructions
- Drain and rinse the jackfruit if using from a can. Add all the ingredients to a high-speed blender, and blitz until smooth.
- I blended my smoothie for 4 minutes roughly, which provided me with a smooth and creamy smoothie.
- Serve and enjoy!

Diabetic-Friendly Beetroot Smoothie Bowl
Ingredients
- 1 cup/150g of raw beetroot peeled and diced
- 1 cup/220ml of unsweetened coconut milk or water
- 1 a handful of fresh spinach
- 1 tbsp of chia seeds
- 1/2 of frozen avocado in chunks
Instructions
- Prepare the raw beetroots as described above, and add all the ingredients to a high-speed blender. If you have a vitamix blender, it will be quick and easy to make it thick. However, if you have a regular blender, if your blender struggles to blend, you may need to add more liquid.
- Blend everything until completely smooth.
