  • 1/2 cup/120ml pineapple juice (not from a concentrate)
  • 1 cup/150g frozen pineapple chunks
  • 1/3 English cucumber (sliced)
  • 1/2 lemon (juiced)

  • 45 Ice cubes to serve
  • 23 Mint leaves to serve (optional)

Instructions

  1. Measure 100 ml of pineapple juice.
  2. If you haven't got pre-frozen pineapple, you will need to freeze some yourself. Get yourself a large pineapple, slice off the skin, and dice it.  Add the sliced chunks to a baking tray, and freeze for a minimum of 2 hours.
  3. Peel off 1/3 inch ginger root, and mince or finely dice 1/3 tsp worth of ginger.
  4. Slice a lemon in half, and juice only one of the halves. You can use a fruit squeezer to make it easier.
  5. Slice the cucumber into rounds.
  6. Once the ingredients have been prepared, add them to a high-speed blender, and blitz for 3-4 minutes.

Notes

Best consumed straight away.

*If you just want the juice, once you have blended the ingredients, strain them and discard the pulp.
It’s recommended that you drink it as it is, without straining it though since the pulp contains nutrients.
